Anyone know the amounts/ratios of the ingredients (rum, honey, wine)? I bought the spices in bulk, but I got one without a recipe!

Please send me th Mama Juana Recipe, I  know that is Rum, Honey and Spices , but what kind of spices and the amount, thanks a lot is for a Dominican dinner

Spices: made up of herbs and wood, you get those either in bags or already in glass bottles just about anywhere in the tourism sectors of the Dominican Republic.

If you bought the spices separately, fill up a bottle with the spice mixture to about 3/4. The size of the bottle is entirely up to you.

Fill the bottle with red wine. Inexpensive wine is fine, you do not need to get good wine for this.

Leave for two weeks. Agitating (shaking) the bottle a bit (15 seconds) every day does not hurt.

After the two weeks, poor the wine into a measuring cup to know how much liquid you have to replace it with. Make sure not to poor out any of the spices. Throw away the wine (do not consume it).

Now replace the wine with 1/3 pure liquid honey and 2/3 brown rum. Better rum makes better mamajuana, but what is more important is how sweet (or not) you like it. So, vary the proportions of honey/rum to your taste.

Shake well to mix the honey and rum

Leave for two week. Agitate once per day for a few seconds.

It's ready to drink after two weeks. However, the longer you leave it the more taste from the spices it aquires. Do not poor out any of the spices.

After finishing the bottle, you can reuse it. Simply add the rum and honey and leave for two more weeks.

As for the spices, I have no idea. You buy them prepared, in a bag or in a bottle.

The rest is pretty clear above: 1/3 liquid honey and 2/3 rum.

I always wanted to try it with Maple Syrup, but that costs quite a bit more than honey. Otherwise, I don't know.

The honey is just for sweetness, you don't have to use if you don't want to. You could also make a sirop using just water (1/4 cup) and sugar (1 cup), boil and then simmer until it gets the consistency of a heavy sirop.

Jim, We just returned from DR and we were able to bring back a bottle of Mama Juana. We only had the bottle with the herbs in it. No alcohol, but they did not even question it. We kept it in our carry on bag, wpapped in paper (so the glass did not break). I am sure you will be fine. Enjoy it!

I just returned yesterday from the DR with my Mama Juana.  Like you I brought back a bottle without the liquids. I also brought home a bag of the herbs.  Some friends that were traveling with us had their Mama Juana confiscated at the airport in Puerto Plata.  They were told by the customs official at the airport that it would have been ok if it was already mixed with the liquids in the bottle.  My friends were even more confused when they proceeded to the duty free shop and found Mama Juana there for sale.  (Needless to say, I didn't volunteer any information to the official)
